Ingredients

  • 2 eggplants
  • 1 med green bell pepper
  • 3 large tomatoes
  • 1 onion
  • ½ c. cilantro
  • 2 tbsp olive oil
  • 1 clove garlic
  • 1 tsp. fresh ginger, minced
  • 2tsp. cumin
  • ¼ tsp black pepper
  • 1 tsp. chili powder
  • 1/3 tsp salt
  • 1tbsp. garlic chili paste (optional)
  • ½ c. green olives

Method

Step 1

Cube egg plants. Boil in salt water in a large pot for 30 min.

Step 2

While eggplants are boiling, chop bell pepper, tomatoes, onion, and cilantro

Step 3

Drain eggplants and return to pot. Add chopped ingredients. Cover and cook on medium heat stirring occasionally for 15 min.

Step 4

Add remaining ingredients and let simmer for another 15-20 minutes until veggies are tender.

Step 5

Serve warm with French bread. Zaluk is also great served over rice, quinoa, or pasta as a vegetarian-friendly entrée.
